Our Lamb are a mix of Wool Sheep and Hair Sheep. Ewes are wool (Suffork, Hampshire) and our Ram is a hair sheep (Dorper). Hair Sheep have a mild flavor while the wool sheep have a stronger flavor.
Lamb Cuts
Chops are cut from the loin about 1 inch to 1-1/2 inch thick. 4 per pack. Weight is approximately 1.0 - 1.5 #
Ground 1.0 pound packages
Spare Ribs also know as a Denver Cut Ribs. Weight .5 - 1.0 #
Frenched Rack is a combination of the Rib and Loin. Can be cut as chops with long bone. Weight is between 1.0-1.50 #
Shank is approximately 1.0 # each. 1 or 2 per package.
Stew Meat is approximately 1.0 pound packages.
